We rarely source coffees from Sumatra, where the traditional wet-hulled process tends to create earthy, savoury, and herbaceous profiles. This method, designed for high-humidity conditions, accelerates drying by removing parchment while beans are still moist—essential in a climate where slow, even drying is challenging. However, in the highlands of Aceh, the Asman Gayo Mill is reimagining Sumatran coffee through natural processing. By drying whole cherries slowly, they’ve produced a coffee that maintains clarity and complexity, qualities we value at Colonna.
